Cajun potato
Cajun potatoes are the perfect balance of flavour and texture. They are boiled potatoes
tossed in hot oil and coated with herbs and sauce. I'd say this is the ideal snack for
anyone who can appreciate how comforting a simple flavour can be.
Ingredients:
20 baby potatoes
6 tbsp of wheat/AP cornflour mix
Water to boil
Salt ¼ tsp
Pepper 1 tsp
Mixed herbs 1 tsp
Paprika 1 ½ tsp
Mayonnaise ¾ cup
Coriander for garnish
- Optional: chopped onion and garlic for topping
Method
after washing, boil all your baby potatoes in a pressure cooker until 4 whistles come. If you do not have a pressure cooker, you can just cook them till they are soft to touch all the way through. Make sure they are not too weak so they do not fall apart.
While the potatoes are boiling, mix your mayo with your spices till they look somewhat like a lovely orange paste. If you do not have or do not want to put in any herbs, it is okay. You can change them or just skip them. But for best results, we suggest you follow the recipe strictly.
Now that the potatoes are done boiling take them out of the cooker and flatten them a bit. They should look like thick discs. You can take off the peel if you want to, but keeping it on will make the end product a little crunchier.
Dip the potatoes in cornflour+ water, put them on a pan with hot butter/ghee/oil, wait till they get golden brown, and take them off to cool. It is best to have a plate with thick tissue paper ready, so once you put the freshly fried products on it, the oil seeps out.
you can also deep fry these for a quick process, but pan-frying is the ideal choice
After 2-6 minutes of cooling, toss the potatoes into the mayo mixture. Let them sit in there for another 5 minutes and plate them the way you want to. Sprinkle some chopped onion, garlic and coriander on for garnish...... and enjoy!
