Sugar-free- gluten-free- vanilla cake
Everyone wants to enjoy a pleasant and tasty treat, but we usually end up with a very unhealthy dish because of the style of food we eat. You can always make it a lot healthier by using natural and organic ingredients, but still... is it perfect for you? There are millions of health problems you can get from eating the most common junk foods. I'm not saying treating yourself to a cookie or a cake occasionally will kill you, but there are times where even you (secretly) have to admit you've come into the area of super unhealthy. So here's a recipe that can satisfy your sweet tooth without damaging your health.............
Ingredients:
- 1 ½ cup ragi
- ½ cup khapli wheat/emmer
- 1 egg + yolk
- ¼ cup oil
- Optional: food coloring
- ½ cup milk
- 1 ½ tsp vinegar
- 1 tbsp baking powder
- 1 ½ baking soda
- 1 tbsp vanilla
- 1 cup jaggery
Method:
- take a bowl and add your milk and vinegar to it, give it a quick stir and keep it aside
- Meanwhile, sieve your dry ingredients into a medium-size bowl and mix. Try your best not to spill.... cuz cleaning is genuinely hard work.
- Then add the rest of your wet ingredients to your milk and slowly add the dry ingredients while mixing. You may end up with a few lumps of curdled milk, but that's absolutely fine.
- if the consistency of your batter is too thick or too thin, adjust accordingly
- Add the food colouring now if you want. It is best to use all-natural pastes or just make some at home.
- bake at 180c/355f for 20 to 40 minutes
Disclaimer: the sprinkles have SUGAR, but I think you can order sugar-free sprinkles online. (though I wouldn't recommend it unless it's completely natural)
